Grapefruit + Cashew Energy Bites (Whole 30, Paleo)

  • ⅓ grapefruit, zested + juiced
  • ¼ cup cashew butter
  • 1 8 oz. package dried cherries
  • 1 Tb. flax seeds
  • 1 cup almond flour
  • Coconut and grapefruit zest, for topping


Blend grapefruit juice, cashew butter and dried cherries until smooth. Add flax, almond flour and zest and blend until a thick paste forms. Chill the mixture for an hour before forming into bites. Top with coconut and grapefruit zest and store in the freezer.
