Paleo Grapefruit Parfaits with Coconut Yogurt and Grapefruit Chia Jam
Store bought coconut yogurt
Grain free granola
Grapefruit chia jam
Grapefruit chia jam:
1 grapefruit, ½ zested and juiced, ½ segmented and cut into bite sized pieces
1 T. plus 1 tsp. Chia seeds
1 tsp. Fresh ginger, grated
To make the chia jam, combine ingredients in a small bowl and let stand for 45 minutes to 1 hour,
stirring occasionally, until thickened.
Layer jam with coconut yogurt and top with grain-free granola.
